Kavaklıdere’s vineyards, located on Denizli’s Güney plateau, are situated at 830 meters above sea level.
• Micro-Climate:
Denizli is a real transitional region. Winters are cool but not often cold and before global warming the area had a lot of rain. Summers are hot and dry (except for the plateau and high altitudes areas). It has a climate that is balanced between the inland Anatolian and coastal Anatolian climates.
• Soil Composition:
The soil structure is variant. It is composed of clay, calcer and pebbles and it is dull grey in colour.
• Pruning and Training Systems:
The single and double guyot training and pruning systems are used in the Kavaklıdere Denizli -Güney Vineyards.
• Yield:
The average yield aimed at Kavaklıdere Denizli Güney Vineyards is between 4000 kg and 6000 kg per hectare. Planting density is 2x1m.
• Harvest:
In order to identify the time to harvest, first of all it is very important to choose a sample plot that will be representative of all the others. If the analysis of a sample (brix, acidity, pH, maturity, etc.) shows satisfactory results, a second sample is taken from the same plot and analyzed. Then it is compared with the first sample analysis and if the results are the same, the plot goes through a taste test. When the taste test is found to be satisfactory the date of harvest is established. When harvesting, it is important to complete the harvest early in the morning before the day becomes hot and to process the grapes as soon as they are picked.
The grapes are harvested between the 20th of August and 15th of October.
